Got some overly ripe bananas that are going bad? Don’t throw the bananas away. Instead, use those bananas to make some banana bread of blueberry banana muffins! See video below for a video tutorial.
Ingredients you will need:
2 – 4 ripe bananas
1/3 cup of melted butter
¾ cup of brown sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
A pinch a salt
1 ½ cup of all-purpose flour
1 cup of fresh or frozen blueberries (optional)
Instructions:
Preheat the oven to 375 degrees Fahrenheit.
While the oven is preheating, start with peeling and mashing the ripe bananas. Once the bananas are mashed, transfer it to a mixing bowl. Pour in 1/3 cup of melted butter. Stir to combine until the mixture is smooth.
Slowly stir in ¾ cup of brown sugar until mixture is smooth. Beat in one egg. Add one 1 teaspoon of vanilla extract, 1 teaspoon of baking soda, and a pinch of salt. Stir to combine until the mixture is smooth.
Slowly add in 1 ½ cups of all-purpose flour by adding 1/3 of the flour at a time, making sure to combine.
If you only want to make banana bread, STOP HERE.
Line a baking dish or a loaf pan with parchment paper. Pour the banana batter into the pan and bake in the oven somewhere between 50 minutes to an hour. To check if the bread is done, stick a toothpick of a fork into the bread. If it comes out clean, it means the banana bread is done.
Let the banana bread cool. The banana bread should slice with ease.
PROCEED if you want turn the banana bread batter into blueberry banana muffins.
If you want to take it one step further by turning them into blueberry banana muffins, pour in one cup of blueberries. I prefer using fresh blueberries, however, in this video demonstration, I had frozen blueberries on hand. Use a spatula or a wooden spoon to mix the blueberries.
Line a cupcake pan with liners and fill each liner ¾ of the way up. Pop the blueberry banana muffin mixture into the oven at 375 degrees Fahrenheit for about 20 minutes.
Allow the blueberry banana muffins to cool.
